Fruit soup made from dried fruits with whipped curds
Serves 4
A typical Seto dessert that was made whenever there was some celebration.
Fruit soup:
150 g dried fruits (apples, raisins and plums etc)
80 g sugar
30 g potato starch
1.2 l water
Whipped curds:
200 g light curds
80 g heavy cream
40 g sugar
vanilla sugar to taste
Wash the dried fruits and soak them in cold water for several hours. Bring the soaked fruit to the boil in the water they were soaking in, add sugar and starch mixed with a bit of cold water, heat to boiling. Serve cooled.
Rub the curds with sugar. Add whipping cream, vanilla sugar and blitz in blender. Serve with the fruit soup.
