Pea pâté
Serves 6
In Setomaa, people still observe Lent. Pea pâté is a great option during a fast, but it can also be eaten at any time as a spread for bread. If you crave a richer pâté, add butter and smoked bacon bits.
200 g dry peas
2 medium carrots
2 smaller onions
20 g butter
1 tsp salt
pepper
Soak the peas overnight, then cook the peas for half an hour until soft. Peel and cook the carrots. Peel the onion, chop and fry lightly in butter. Then run all the ingredients through a meat grinder. Place the resulting mixture into a pot and heat. Add salt and pepper. Transfer the pâté to a separate dish to cool.
