Onion pie

People in Setomaa have long made filled pastries with yeast dough, and this delicious pie is no exception.

 

Filling: 
1 kg peeled onions
3 boiled eggs
4 raw eggs
800 g sour cream
2.5 tsp salt
1 tsp sugar
150 ml oil for frying the onions

Dough: 
800 g flour
200 ml milk
400 ml water
30 g yeast
50 ml oil
1 tsp sugar
1 tsp salt

 

Dice the onions and fry until soft, season with 1.5 tsp salt. When the mixture has cooled, add chopped eggs.

Dissolve the yeast in warm milk, add sugar and water and half of the flour. Let rise up to 20 minutes, then add salt, the oil and the rest of the flour. Let the dough rise again. The dough should be thick enough that it can be poured on to a large baking sheet and smoothed with one’s hand. Then spread the onions on the dough.

Beat four eggs, add sour cream, the salt, sugar and pour on the pie.

Bake for about 35 minutes at 180 °C.
