Cold and creamy summer soup
Serves 3
A cold soup was a summer standby.
400 ml kefir
100 g cucumbers
100 g tomatoes
60 g pickles (homemade are best)
100 g radishes
100 g boiled potatoes
1 boiled egg
1 clove of garlic or garlic pepper
1 tbsp olive oil
1.5 tsp salt
0.5 tsp sugar
Dill, parsley, scallions, ground black pepper
If desired, peel the cucumber and cut into long thin strips. Chop the tomato, pickle, radish, potatoes and eggs and combine in a large bowl. Season with the garlic or garlic pepper, salt and sugar. Dress the mixture with olive oil and chill for about 30 minutes. Add the green herbs. Pour in the kefir and mix well. If necessary, add sugar or salt. Garnish and serve cold.
